The region & language section of the control center has an options dialog window in which it is mentioned that "Alternative switch to next source" is Alt+Shift.
All the other key bindings are available in the keyboard section of the control center, but that one is missing. As a result it cannot be changed :(

Could it be possible to add it?

It's in gnome-tweak-tool, and will likely stay there given the latest mockups.
