When I click on a .desktop file, nautilus warns me about it probably being risky if I try to launch it... but I see no option to simply get it opened by a text editor allowing me to read/edit it.

This particular bug has already been reported into our bug tracking system, but please feel free to report any further bugs you find.

While this is not fixed, you can open the file from the text editor.

Yeah, I am currently needing to manually open them from the text editor... but I was wondering if maybe I could simply right-click on it and get a "Show" option that would open text editor directly ;)

Indeed, that's one of the options. The other option is treating .desktop files as regular files, like text files. I think the discussion on the direction to go should happen in the context of bug 688632, having already been acknowledged by a maintainer.
