When I right-click on an e-mail in order to create and event from it, I always get a "calendar is read-only" error, whichever calendar I choose (I have two). Creating an event from the Calendar mode works fine.

This is a regression: it worked fine in Fedora 20 (Evo 3.10.4). Now I'm using Evo 3.12.8 on Fedora 21.

Thanks for a bug report. There had been some issues with D-Bus property delivery. It usually helped to go to the Calendar view first and let the calendars fully open. I made some changes regarding this issue for the upcoming 3.14.0 release, which will be done together with GNOME 3.16.0. I'm marking this as a duplicate of a similar bug report, but note that I made more changes than only within that one bug for 3.14.0.
