Evince 3.10.3 (in Ubuntu 14.04) has an "Inverted Colours" option. I don't have a use for this personally, but its presence made me realise that a "View as greyscale" option *would* be fantastically useful for people like myself who need to proof-read (scientific) documents and make sure that they will remain legible when printed out in black and white.

Hopefully since the relevant rendering backend work has been done to allow colour space transformations like the inversion, such a feature would not require any large reworkings... and as mentioned I think many people would find it immenselly useful (at least as many as there were to justify the inversion feature!)
