Currently you can not select a different desktop environment on user accounts that have no password via GDM. Especially in GNU/Linux, it is very usual to use more than one desktop environment (or different versions like GNOME classic session), for testing or other uses.

If winds handle a user account without a password is not recommended, it is a valid option, and is supported by GNOME.

As an idea, it would be interesting to highlight a user in GDM, see the gear button that lets you select a different desktop environment.

In GNOME 3.10 is not allowed to create a user account without a password. However, I believe that this bug report remains open, should be possible to create a guest user account.
