In the e-mail composer of Evolution, you can choose "Edit" → "Current Languages" where you can select the language to use for the spell checker. Right now I've got both US English and Dutch enabled, which covers my use case, but I think this would not even need user involvement if Evolution would detect the languages that are used?

Or does Evolution depend on some other GNOME infrastructure for the spell checking, and should I file a bug against a different product and component?

We use Enchant, which hasn't seen active development in several years.

I'm closing this, the main question had been answered, and there is basically nothing to be done on the evolution side.
