Matthias, just one question, in what affects to have the dvi or xps keyword there and having an evince without the dvi or xps backend compiled? Will the shell try to open such files with evince? or is it just for evince to appear when searching for some of the keywords?

the keywords are used when searching in the overview. adding 'dvi' as a keyword will make evince show up in the search results when typing 'dvi' in the shell search entry. You still have to launch the application yourself by clicking on it.

We could add some of the keywords depending on the backends availbale, but I don't think it's wirh the effort, tbh. Matthias, add also djvu and tiff before pushing it, please.
