In the version of Evolution I am using, it is not possible, when having a Google contact list, to get the birthday. I check in Gmail and this information is currently available. Would it be possible to have this field synchronized too?

Thanks for a bug report. his had been addressed within bug #630358, and it requires latest libgdata and evolution-data-server (with evolution) 2.91.1+.
