There is no man page for gvfsd. gvfsd --help is unhelpful. It should be explained somewhere what gvfsd does.

gvfsd is not something a user should be launching, and as such it is in libexec, not in bin. I don't think we generally have manpages for such things. 

gvfsd --help has a short explanation and documents the command line options. I don't see the need for any more documentation, as this is not something users should touch.

Then how do you figure out what gvfsd does? gvfs starts half a dozen processes, it would be interesting to know why.

gvfsd is the main gvfs daemon, it tracks the currently mounted gvfs mounts and lets you find/contact them. It also spawns daemons for the gvfs backends when they are mounted.
