Currently, evince seems to remember the last used settings for zoom level and dual page viewing.  However, this can be pretty annoying when opening a totally unrelated document (downloaded from firefox or something) that opens to zoomlevel 150% and dual page view.  I propose that for newly opened documents, evince uses a sane default (perhaps "fit to width" with a minimum zoom of 100% or so).
