gnome-terminal ships with an old 48x48 pixmap icon which is still used for stuff like the default window icon. It is also visible in the window switcher.

Instead of using this icon (which is installed to $PREFIX/share/pixmaps/) the gnome-terminal icon from gnome-icon-theme should be used.

Here you can see the improper usage of the old icon... while the tiny window icon looks nearly fine, the icon in the switcher doesn't look too nice. And if you use another icon theme you will end up having a totally different icon in the application launcher and the switcher...
