Possibility to specify the level of compression (for zip or 7z for instance), like 7-Zip on Windows.

there is no ui for this, but you can use the gconf editor to change the compression level:

The key is /apps/file-roller/general/compression_level  
Possible values : very_fast, fast, normal, maximum

please make this high priority! i need to change between "no compression" and "maximum compression" very often, depending on if i just need to pack already-compressed files together (JPGs, MP3s etc.) or really compress files to archive or to someone via internet.
