the request to change encoding of an opened file is tracked in bug 342918. I am changing the summary to the second enhancement request.
It seems gedit still does not have its encoding displayed in the status bar (as of 2.30.2). Seeing as it has been quite some time since the request, I wonder if it's something hard to do (possibly related to other problems), or it has simply been put away due to lack of developer time.
In my case I don't feel like the encoding should be displayed in the statusbar, it is not something that it is going to change often. Also if you want to know the encoding of the file you can put the mouse over the tab or in the documents panel.
Oops, I'm really sorry for the non-issue. I never noticed this feature and didn't find any mentions to it in bugzilla, so seeing this thread I assumed it hadn't been implemented.
Displaying the encoding in the tab tooltip should be enough.
