Most requests cover extending exif data, I would like to see the oposite: to
remove exif data (I don't want to have all data about camera and everything in
every picture), something like 'convert -strip'.

You could write a plugin to do this in the current development version (ext branch, see http://live.gnome.org/gthumb), but it is not useful to the majority of gthumb users, so it will not be a default feature.
