simply it seem to do not exist matlab or octave files syntax highlighting

I'm using gedit Version: 2.10.2-0ubuntu1

Syntax Highlighting is provided by the GtkSourceView library.

I have libgtksourceview-common but it doesn't provide Matlab syntax Highlighting

Yes, that's why I marked this bug as a duplicate of the bug which requests
matlab highlighting support for GtkSourceView. That bug also contains a
matlab.lang file which you can drop in
/usr/share/gtksourceview-1.0/language-specs to get the highlighting, however I'm
not sure of its quality.
