Use xmodmap to change some keybindings
run gnome-settings-daemon
Notice that keybindings have been lost.

This is supremely frustrating!

Is there a setting that disables this behaviour? There should be!
On an unrelated note, is there a way to have my gnome-terminal/galeon/other
stuff save settings without the daemon? Can't they read/write the settings
directly if the daemon is not running?

Thanks for the bug report. This particular bug has already been reported into
our bug tracking system, but please feel free to report any further bugs you find. 

And the gnome-settings-daemon is probably not needed by the apps but used for
the fonts/themes/...
