When trying to view Photo's from my camera I had issues because the pictures
where called .JPG renaming them to .JPEG gave the same result. Would it be
possible to add these 2 types of extensions to the .jpeg format as they are
often used.

Was this with gnome 2.4, or gnome 2.6?
Could you also give the version of gnome-mime-data, and shared-mime-info (if
applicable).

This is with gnome 2.6.x

Software versions where applicable are

gnome-mime-date is 2.4.1
eog is 2.6.1

I don't have shared-mime-info in my gnome install.

With the latest version of gnome I don't have this issue anymore. this is gnome-2.14.1
