Currently, web search within the overview search will open Epiphany and it's default search engine.

It would be nice to open the web search with the desktop's default browser of your choice from Settings -> Details -> Default Applications (ex. if I set up Firefox as my default browser, whe overview search facility would open Firefox with its default search engine instead of Epiphany)

That's because the "Search the web" result is provided by epiphany - together with results from bookmarks and browsing history. It would be possible (while odd) for epiphany to launch a different browser when "Search the web" is activated, but implementing the other results for different browsers would be really weird.
The correct solution (IMHO) is to ask other browser vendors to implement the shell's search interface just like epiphany.
