I am not sure if this is a problem in Mutter, but it's my best guess.

When using a 120-144Hz compatible monitor and proprietary Nvidia drivers (any version), Gnome will not load the respective refresh rate settings created by the Nvidia X Server Settings utility.

Steps to reproduce:
1) Open Nvidia X Server Settings utility
2) Set to native resolution and refresh rate to 120 or 144Hz and "Apply"
3) "Save to X configuration file" (in this case, /etc/X11/xorg.conf)
4) Reboot into Gnome; the resolution and refresh rate settings will have defaulted back to "Auto" (see Nvidia X Server Settings again to confirm)

Strictly this isn't a dupe but when bug 655041 gets fixed you'll be able to configure the desired refresh rate in GNOME thus rendering this bug obsolete.

Note that we can't simply "load the respective refresh rate settings" from xorg.conf because the refresh rate is actually part of a (xrandr/drm) mode which can't be broken down in smaller parts.
