Open As New function — to copy the details of any existing email into a new editable email. Fields to be copied should include "TO", "FROM", "SUBJECT" and "TEXT". This would also allow template emails to be created (and maybe helped in a dedicated folder). Google email does not yet provided this and it is one of the few things that keeps me with Thunderbird. I hope this will be possible in a future release.
