For consistency with other applications, and following the examples given in https://live.gnome.org/GnomeGoals/PortToGMenu, Evince is lacking the "Quit" item from the menu (not to mention the about one, but that's less important).

This is important especially if, in some near future, you want to hide the title bar of the application when you go full-screen to save some screen estate (as e.g. epiphany or nautilus do).
