docs: change id for Wayland section to not conflict with OS X

Causes both the OS X and Wayland sections to link to the same location.  Go to https://developer.gnome.org/gtk3/stable/ and click on either "Using GTK+ on Mac OS X" or "Using GTK+ with Wayland" and you get the Wayland docs located at gtk-osx.html.
