When I created a new label in Gmail and moved some messages from the Inbox to be filed under that label, the Inbox in Evolution got updated right away to not contain the messages that were removed, but the new label only showed up after a restart of Evolution.

Thanks for a bug report. Apart of an unpredictable (by RFC) behaviour when multiple clients are connected to an IMAP server, this had been reported in a similar form already, as bug #202576. I'm marking this as a duplicate of it.
