I've found that moving IMAP folders sometimes simply deletes for folder; that is, it's no longer at its old location and it never appears in the destination.

I'm not sure exactly what triggers this; but it seems like it may be more likely to happen when the drag-and-drop operation is performed quickly and/or when the destination is a parent folder.

My IMAP server in this instance is dovecot 2.0.19.
