I have some elderly people using Gnome and Evolution.  It is physically impossible to educate them on the difference between the trashcan icon and the wadded up piece of paper.  If I could customize the toolbar, removing BOTH junk icons, life would be sooooooooooooooooooooooooo much more pleasant.

Hi Roland,
as a workaround you could manually replace the icons under
/usr/share/icons/gnome/*/actions/mail-mark-junk.png
/usr/share/icons/gnome/*/actions/mail-mark-notjunk.png

Apart from that, marking as duplicate of bug 254097 / bug 396416.
