wm-schemas: Adjust default bindings for maximize/restore

GNOME Shell/Mutter now define keybindings for window tiling, which
default to <Super>Left/Right. Using <Super>Up/Down for maximization
and restore fits those much nicer than the current <Alt>F10/F5 defaults
(which continue to be supported).
