Currently it is not possible to sort on 'Data Accessed' (atime) in Nautilus IconViews. Although atime is not always completely reliable I still suggest to allow sorting on atime in IconView as well since some users find it really useful to use this to see what files are new in a directory.

Yeah we had this recently actually but it turns out for various reasons that the accessed time is completely bogus and doesn't get updated. We removed the ability to sort by this field. I think this is unfortunate.
