I have started a new effort to enable optional branding of certain components in packages in a derivative-friendly way.  The standard is fairly simple: https://wiki.ubuntu.com/branding

Basically, all Gnometris has to do is look for its background at /usr/share/branding/gnome-games/gnometris/pixmaps/gnometris.svg, and if this fails then fall back to the normal /usr/share/gnome-games/gnometris/pixmaps/gnometris.svg

We've dropped the background image from the new version.
