As with kconsole --noclose and xterm -hold, gnome-terminal needs to have the ability to run a command and have the terminal window remain open.

This needs to be something that can be set with a command line option (--noclose) so that it can be called from a script.

Currently the only way to do it is to use the --window-with-profile=keepopen and assume that a keepopen profile exists that keeps the window open for you.
