The desktop file (http://svn.gnome.org/viewvc/gedit/trunk/data/gedit.desktop.in.in?view=markup) should probably include all MimeTypes supported by gtksourceview (http://svn.gnome.org/viewvc/gtksourceview/trunk/gtksourceview/language-specs/).

no, we (and other gnome programs like nautilus) use mime hierarchy to figure out that e.g. text/x-something is a child of text/plain
