Not being native English speaker, I have difficulty to understand the following sentence from Cheese documentation (the second part):
"If your video appears to be jerky or have a low frame rate (only updating the picture every few seconds), it is very likely that the recording will not have it and, have a more constant and higher frame rate instead."

hmm.. you are right, that that sentence isnt really easy to understand. generally this paragraph means, that even if your display is showing a jerky or a low frame rate video, it might be that youre recorded video is ok.

how could be say that in an easier english?

Maybe something like that:
"...it does not mean that the original recording is of bad quality. It has probably a more constant and higher frame rate than what you see."
