The Security tab in account editor is pretty unusable for setting PGP/GPG. The gajim's one looks much better and it allow you to select your gpg certificate instead of typing some not-easy-to-remeber string in Evolution. I'll attach some screenshots how it is handled in gajim.

Other information:
Evolution could share some privacy settings with Seahorse (eg. which key to use). Would be great to have some better integration with Seahorse and Evolution.
