Currently, it's very hard to change the source of the dictionary. It could be made easier. See:

a dictionary source chooser to be placed in the sidebar is planned for the 2.21/2.22 cycle.

this is a screenshot of the dictionary sources list page of the side pane in my development repository. it's not finished yet (it still needs to display the currently selected dictionary source in bold, or something like that).
