It would be awesome to be able to select which locale you want to use when sorting.

For example, I'm working on bilingual tables.
I want to be able to sort according to the order of language X for a sheet and according the order of language Y for another.
Right now the only way I know is to run Gnumeric with LC_ALL=X, sort the first sheet, the run Gnumeric with LC_ALL=Y, sort the second sheet.

Sounds reasonable (and is not unlike what we do for text import).

Could you provide a sample file in which sorting should be different
based on selected locale, please?

Never mind, fixed in trunk.  This sample works just fine.  The first two
elements ought to behave the same in da_DK and the third should come
before the first two.
