If you try to disable the Toolbar using View > Show/Hide > Toolbar, the entire display is disabled (not just the Toolbar). The menus are not shown.

To fix this, you have to use gconf-editor to manually set /apps/gthumb/ui/toolbar_visible.

Fixed in trunk (rev 1502), should appear in 2.10.1.
