users in my company asked me how to set the priority of outgoing messages.

I've show them the option when composing a new message "insert -> 'prioriser' the message"...

They would like to have more options : "very hi/hi/normal/low/very low" like thunderbird.

I agree with original request - you want at least 3 levels of priority - Low, Normal, and High. Currently you can do 2 of those 3 levels, with "Low" being the missing one. I was going to log a new bug for this, but saw this one, and it's closely related I think, and so will instead include the details here:

Evolution: Cannot see a way to mark my outgoing email as low priority

When mailing friends jokes or amusing items, previously I would always mark the item as "low priority" to indicate that the item does not require them to do anything, and that I don't expect a response, and that they can ignore it until they have some quiet time.

However, now that I am trying Evolution 2.22.3.1, I cannot see a way to mark an item as "Low Priority". I can see a way to mark a message as high priority (File -> new -> Mail message, then Insert -> prioritize message), but I cannot see a way to do the opposite, and explicitly say "this message is NOT important". Is there a way to do this, and if not, can it be added please?

Currently no plans to change the current behavior. Evolution team thinks that it is up to the recipient to define what's high or low priority.
