Please describe the problem:
To make a long story short:

I recorded this with Byzanz, the quality blows but it's helpful.

When you go Contacts in Evolution, open an address book, choose customize
current view on that address book, remove some fields which are shown. close
Evo, start it again, look at the address book, and the fields which you just
deleted are still shown. In short, Evolution doesn't remember the preference for it.

That it remembers my preferences for the fields shown.
