There are several fonts available in Preferences/Message Fonts, but that only
applies to incoming messages.  My outgoing font is whatever I'd like it to be,
as long as I like it to be Unicode (UTF-8) or Western ISO something-or-other.  A
sweet option would be to have Evolution keep its primitive outgoing text format
but allow a user the option to create and edit outgoing mail with Open Office
Write.  Yes!  Is it too early for a Christmas wish?
