Description:
After upgrading from evoution 1.0.8 to 1.2.0, the key bindings in the
mail composer window are no longer changeable. I have tried changing
them with tools->settings->Composer Preferences->General->Shortcuts
type
but this doesn't work.

For evolution 1.0.8, I set them to Emacs like using
Edit->Properties->HTML Viewer->Keyboard Shortcuts, and that worked.

Most of the Shortcut heys are working for me (Evolution 2.2.2 and gtkhtml2-3.6.2)

problems persist, using 

 evolution      2.0.4-1
 gtkhtml3.2     3.2.5-1
 gnome-spell    1.0.6

and
 evolution      2.2.2
 gtkhtml3.6     3.6.2-1
 gnome-spell    1.0.6

removing gnome-spell restores key-bindings to emacs
