I have two files on my Open Recent menu that do not exist.
Trying to open one fails silently. Trying to open the other states
that no suitable application could be found.

In both cases, there should be an error alert indicating the file is not
there, and the file should be removed from the menu. Better still, remove
the file from the menu before it appears.

Sounds like a libegg enhancement for me, at least for the "remove
missing file" part. Moving there.
