Many of the card games in this suite draw a window which extends beyond the
area of the physical screen. There is no way to resize it manually that I
can see.

All other functions on all other areas of the GNOME2 desktop; its panels
and tool bars etc, appear to work correctly on our system.

FWIW, I am so impressed with GNOME's clean, efficient look that I've dumped
KDE entirely. My graphics development partner loves me for that decision.

I can confirm this (on gnome-games 2.3.3).
For example start 'sol' and select a few different games
On my 1024 * 768 screen
"Chessboard" extends beyond the bottom of the screen.
"Bakers Dozen" extends beyond the full width of the screen, giving an
unplayable game.

This is still valid in gnome-2.5 and is also mentioned in the TODO
file of gnome-games so I'm changing UNCOMFIRMED->NEW.

I'm pretty sure this is already covered by another bug report: 
games should be resizeable [smaller and larger]
