gsettings set org.gnome.desktop.interface clock-show-weekday true
(or false)

The clock in GNOME Shell's top bar doesn't update to show or hide the weekday until the start of a new minute.

In contrast, clock-show-date takes effect immediately.

This looks like it's fixed in 3.29.90.1 as part of the work done in
https://gitlab.gnome.org/GNOME/gnome-desktop/issues/8
