the left-to-right precedence is still listed at the manual of gcalctool under the "Quick Reference: Keyboard Shortcuts" table 17 however the option was removed with bug 500994, thanks.

It is also in the "4.1. Order of Operations" subsection of the manual.

The man page (man gcalctool) is also wrong. Gcalctool is using arithmetic precedence, and not left-to-right precedence.
